METHOD
- Squeeze the 4 lemons – this should give you about 150ml of juice. Strain if necessary to remove the seeds.
- In a jug, mix the honey with a small glass of lukewarm (not hot) water to make it completely runny.
- Add the lemon juice, then top up with the rest of the cold water and stir.
- Leave to rest in the fridge for 30 minutes to allow the flavours to develop fully.
- Serve well chilled, with ice cubes and a few slices of lemon.
TIPS & VARIATIONS
To turn your still lemonade into sparkling lavender lemonade, simply add some ice-cold sparkling water. The bubbles lend a light, lively touch, and bring out the floral notes of the acacia and blossom honey even more.
