Savoury crêpes with honey, pistachios and mint

Savoury crêpes with a Middle Eastern touch, perfect as a starter or a simple, original main course.

Acacia honey – 250G

Miel d’acacia Lune de Miel® is renowned for its exceptional sweetness and delicate floral notes. Its subtle, floral flavour is enjoyed by young and old alike.

Overview

Method

  1. Mix the flour and salt. Add the eggs, then gradually stir in the milk. Finish with a drizzle of olive oil.
  2. Leave to rest for 15 minutes.
  3. Cook the crêpes in a hot, lightly oiled frying pan (1 minute on each side).
  4. Mix the fresh cheese with the acacia honey, then add the chopped mint and a little pepper.
  5. Spread a thin layer of the mixture over each crêpe. Sprinkle with chopped
    pistachios.
  6. Roll or fold it, whichever you prefer.
  7. Drizzle with a little acacia honey and add a few fresh mint leaves just before serving.

Tips & Variations

  • Add a little lemon zest for an even fresher flavour.
  • If you want to mix it up, try replacing the goat’s cheese with feta and a few fresh herbs.
  • Serve warm, accompanied by a crisp salad.
